Tuesday night we’ll be pouring bubbles galore of a wide selection of Pét-Nat wines (Pétillant Naturel) at both a.kitchen and a.bar, all night long. Pét-Nat wines are made via the méthode ancestrale, the OG of sparkling wine production. Before the grape juice is finished fermentation, it is bottled and sealed. Fermentation continues in the bottle until completion, leaving the wine with light, fizzy bubbles. The wine is also not disgorged so they tend to be a bit cloudy and rustic.
As an added bonus, Chef Eli Collins will be making versions of Tarte Flambée (it’s essentially French pizza) to go along with the wines. Celebrate the winemaking traditions of our ancients with us!
